I want to get a head start on Sunday, from the weekend orders, and print labels and label my packages for dropping at the post office for Monday morning, Will that have any affect on my lead time etc?

No, not a problem.
You can select your shipping date when you print the label, but even if you forget to do this, as long as it is scanned by the shipping date, there will be no issues.
